[cooking] Wafu salad with sesame soy sauce dressing


Any salad mix can be used to make japanese inspired salad. I usually purchase spring mix or plain romaine lettuce and pair with campari tomatoes cut in halves. There are many types of tomatoes like hothouse, beefsteak or bite sized ones like grape or cherry tomatoes, however I find that medium sized juicy campari tomatoes are in the perfect size to pair with salads.

I will also add nutritious wakame (japanese seaweed), which is loaded with magnesium, iodine, irons and calcium etc. to the salad. all you need to do is to soak the dried wakame in a bowl of water to soften it before serve.

To make your own fresh wafu sesame salad dressing can be easier than you think.

what you need (for 1 serving):

– 1 tbsp sesame oil
– 3 tbsp ponzu
– some toasted sesame
– 2 tbsp daikon oroshi (grated radish)
– 1 tsp maple syrup or any types of sugar
– some freshly ground peppers and coarse salt
– add some lemon juice if you desire

The above measurements are rough estimates, I never really follow measurements strictly, in most of the time I always start with less and add on it when I want a certain stronger flavour. Please adjust more or less to suit your own taste.
