[making] make your own Asian noodles in 3 steps

Asian noodles can be cooked in soup or stir fry, they often come in frozen packages, dried instant ones or fresh ones. Fresh Asian noodles are much more chewy and you can actually make it your own with just three little steps.

You certainly don’t need a pasta machine to make this, you can roll the dough with your hands or, if you have a food processor or stand mixer it will give you a big helping hand.

This recipe yields about 500g of noodles, and perfectly pairs with the Red braised beef noodle soup in Taiwanese style.

What you need:
– 2 cups of all purpose flour and some for dusting
– 3/4 cup of water
– 1 tbsp of oil
– pinch of salt

What you do:
1. Mix all ingredients in a stand mixer to make a dough
2. Wrap the dough in plastic wrap and rest in a cool area for about 30 mins
3. Prepare a clean workspace, dust flour and roll out the dough with a rolling pin to a thin sheet to the size of about 1ft x 1ft, roll forward and cut into strings of noodles

p.s. Weigh the noodles before you separate them in portions for individual serving. It’s better to untangle and lay the noodles flat once you cut it and Remember to keep dusting to avoid sticking together.
